Each place has its own recipe: with the shortcrust pastry or with strudel dough (traditional and thin: the apples are rolled in before putting it in the oven) or with puff pastry.
There are also versions with other types of fruit: pears, apricots, berries and there are also those who apply the strudel formula also to prepare savory pies, for example with vegetables, sauerkraut and cured meats.
The classic ingredients are: apples, raisins, sugar, cinnamon, walnuts or pine nuts and egg yolk.
Val di Non, in Trentino, is an area where there is a particular tradition of strudel, also given the presence of PDO (Protected Designation of Origin) apple cultivations. Here it is prepared with Golden Delicious apples both because it is found in every season but also because it is sugary and able to keep the cooking, while at the same time maintaining its softness.
