An Ancient Traditional First Dish of Italy
The gnocchi is a very old food, prepared with different flours: wheat flour, rice, semolina, potatoes. The most common gnocchi in Italy today, are made with potatoes, widespread are also those made with a simple mixture of water and flour. Those prepared with semolina are nicknamed “Alla Romana” (meaning Roman); others still use corn flour; moreover, various other ingredients are used according to local/regional tradition. They can be served as a first course, as it is the tradition in almost all of Italy, or you can serve them as a single dish.
Gnocchi can be hard-boiled or soft.
The size, the quality of potatoes, the kneading. All of them can affect the final result.
